How to Make Matcha Coconut Mug Cake

Ingredients

  • 2 tablespoons sugar
  • 3 tablespoons flour
  • 1/2 teaspoon matcha powder + 1/2 teaspoon for frosting (we used Chamberlain Coffee's Ceremonial Grade Matcha Tea Powder)
  • 1/4 teaspoon baking powder
  • 3 tablespoons of coconut milk
  • 2 tablespoons of coconut oil + 1/2 tablespoon for frosting
  • Pinch of sea salt
  • 1/2 cup of white chocolate chips
  • Coconut flakes

Mug Cake Recipe Instructions

  1. Find a cute ceramic mug, like our Matcha Heaven Mug.
  2. Pour the 2 tbsp of sugar + 3 tbsp of flour + 1/2 tsp of matcha + 1/4 tsp of baking powder in the mug and mix
  3. Pour the 3 tbsp of coconut milk + 2 tbsp of coconut oil + pinch of salt into the dry ingredients and mix again
  4. Wipe down the sides of the inner mug
  5. Place mug into the microwave and heat up for 1 minute and 30 seconds
  6. Allow it to cool down before adding your toppings

Matcha White Chocolate Frosting Recipe Instructions

  1. Use a double boiler. If you don't have one, take a medium-size glass bowl (or any heat-resistant glass will do) that can sit nicely on top of a sauce pan
  2. Boil water in the double boiler or in the sauce pan
  3. Add about 1/2 cup of white chocolate chips + 1/2 tbsp of coconut oil + 1/2 tsp of matcha into the bowl
  4. Place the bowl over the boiling water and mix the ingredients with a spatula. Feel free to add more coconut if the mix isn't as smooth, or more chocolate if it's too thin.

Assembly Instructions

  1. Take a small spoonful of the frosting and spread it around the top of the cake
  2. Sprinkle a small amount of the coconut flakes on top of the frosting

VOILA!
